At Christmas time, treats become a staple of most people’s diets. From Christmas cake and mince pies to chocolates, stollen and gingerbread.
Understandably, for people who have dairy or gluten allergies, it can be tough to find a suitable festive treat, and in my opinion, nobody should be left out at the party just because they can’t eat certain things.
Cue Delicious Alchemy! Their entire range of products is gluten free, from more practical products like white and brown bread mix, to some lovely treats like cookies and cakes.
I was lucky enough to be sent some of their fruity Christmas Cake mix to try out and review. In the spirit of sharing, I decided to make it as a festive treats to take into the office on Secret Santa day!
The cake mix was nice and simple, with all the dry ingredients packaged up together. All that needed adding was butter (or dairy free alternative), eggs and if using, alcohol. I used Brandy in mine.
All it took was a good mix before being transferred to a well greased cake tin.
I baked at 140C (fan) for 1 hour and 45 minutes as packet instructions advised, and this was the result!
It didn’t rise too much, but came out a lovely golden colour and filled the flat with the smell of Christmas!
I left this for around 3 weeks, feeding it a couple of tablespoons of brandy every few days before covering in marzipan and icing.
I used these gorgeous snowflake cutters from Lakeland to create the effect and used plenty of edible glitter for bling! It went down pretty well with my colleagues too…
It wasn’t quite as moist as I had hoped, as I would have soaked the fruit before adding to the cake mix normally, but in terms of flavour and ease, this was perfect, and ideal for anyone with allergies as it’s vegetarian and gluten free.
